Chicken and Mushroom San Choi Bau

Bring a little bit of Asian cooking into your kitchen with this delicious chicken san choi bao. Easy to make and packed with loads of  vegetables, this tasty dish will be a winner with the whole family at dinner time.

INGREDIENTS - serves 2

300g chicken mince

250g mixed mushrooms

1-2 large zucchinis chopped into 1-2cm pieces

2 carrots chopped

1 small head broccoli broken into small florets

1 tsp sesame or vegetable oil

1 tsp minced garlic

2 tbsp ketchup manis sauce (sweet soy)

1 tbsp sweet chilli sauce

2 tbsp soya sauce

leaves of iceberg lettuce, trimmed into circles and chilled

INSTRUCTIONS

1) Marinade chicken mince in soya sauce for 30 minutes.

2) Heat wok and add oil. 

3) When wok hot add chicken mince and garlic. As the chicken colours , add the mushrooms, zucchinis, carrots and broccoli. Cook until vegetables soften. 

4) Add the ketchup manis and sweet chilli sauce. Stir through the sauces and simmer for 10 minutes.

5) Serve in the lettuce cups.

 

Notes

You can use different vegetables if desired. If you have a gluten intolerance or are coeliac you can substitute the soya sauce with tamari sauce.
