Zucchini and Carrot Bake

INGREDIENTS

(Serves 2)

1 leek sliced thinly

2 zucchinis grated

1 carrot grated

1 egg beaten

1 tsp Olive oil

Salt

Pepper 

INSTRUCTIONS

1) Preheat oven to 180 degrees

2) Sauté leek in olive oil

3) Combine carrot, zucchini, leek and egg.

4) Add salt and pepper as desired

5) Place in baking dish

6) Bake for 30 Min or until golden 

Optional addition : Add 3 Tbsp of ricotta and mix through with vegetables
