Cauliflower Cottage Pie

INGREDIENTS

500g lean mince

2 tbls olive oil

1 clove crushed garlic

1 chicken stock cube

1 can tinned chopped tomatoes

1/3 cup tomato sauce

1 cauliflower cut into florets

Salt to taste

INSTRUCTIONS

1) Cook and brown mince in 1 Tbsp of oil and garlic. Make sure you separate the mince as best you can. ( You can use a fork but my favourite gadget to do this is the hackit @hackitaustralia).

2) Add crushed chicken stock cube and continue to cook mince.

3) Add the canned tomatoes.

4) Add the tomato sauce. Mix well.

5) Bring to the boil. Then simmer for ~ 50 min.

6) At the same time either steam or boil the cauliflower for 10-15 Min. You will know it is ready when you can pierce it easily.

7) Place in blender and mix with olive oil and salt to get a smooth consistency. If you prefer it chunkier just use a potato masher.

8) Place mince in a rectangular pyrex dish or corningware.

9) Top with the mashed cauliflower.

10) Bake at 180 degrees until crisp and golden.
