Cauliflower Mash

INGREDIENTS

  • 1 large head cauliflower 

  • 1 small onion diced

  • 1-2 Tblsp olive oil

  • salt and pepper, to taste

METHOD

  1. Remove greens from the head of cauliflower and break the cauliflower up into large florets.

  2. Steam cauliflower until it is very tender. 

  3. In a separate pan sauté the onion until they are caramelised. Set aside. 

  4. Place cauliflower and onions in food processor or a blender and blend. 

  5. Slowly add olive oil and continue to blend until the cauliflower reaches the consistency you like (this depends on your taste and the size of the cauliflower).

  6. Add in salt and pepper, to taste.

  7. Serve with your favourite protein.
