Grilled Asparagus with Leek

INGREDIENTS

(2 bunches Asparagus (thick spears)

2 leeks sliced into rings

2 tbsp Olive oil

1-2 tsp Maldon Salt

1-2 tbsp roasted pinenuts

INSTRUCTIONS

1) Heat oven 200C

2) Line a baking tray with baking paper and drizzle a little olive oil

3) Lay asparagus on tray over oil and roast for 10-15 min until soft but not overcooked

4) Meanwhile heat a frypan with a little olive oil

5) Lightly fry the leeks until they are soft and golden

6) Place the asparagus on a platter, sprinkle leeks on top

7) Sprinkle pinenuts on top
