Vegetarian Cauliflower Pizza

INGREDIENTS

  • 1 Large head Cauliflower food processed into rice ( can buy already processed from supermarket)

  • 1 egg beaten

  • 2 zucchinis sliced

  • 200g mushroom sliced

  • 4-6 artichokes in water drained

  • Napoletana sauce 

  • Mozzarella cheese, ricotta or feta ( as per preference) 

  • Salt and pepper to taste

  • Olive oil

INSTRUCTIONS

  1. Preheat the oven to 180 degrees.

  2. Chop the artichokes into quarters. 

  3. Slice the zucchinis and mushrooms.

  4. Spray zucchinis and mushrooms with oil and sprinkle with Maldon salt and any other spice you like to season with. 

  5. Bake until cooked through. Set aside.

  6. Preheat oven to 210 degrees.

  7. Food process cauliflower. 

  8. Beat egg and combine with cauliflower.

  9. Spread cauliflower and egg mixture onto lined tray and back for ~20 minutes until cooked.

  10. Spread a layer of napoletana sauce onto the cauliflower base. 

  11. Sprinkle the pre baked vegetables, artichokes and cheese onto the pizza base. 

  12. Bake at 180 degrees until cheese melted.
