Baked Spanish Chicken
INGREDIENTS
1 x chicken cut into 8 portions ( you can use any cut of chicken ie. Chicken breast or thigh fillets)
1 Tbls olive oil
1 x 400g tinned crushed tomatoes
1 x 400g tomato soup
1 Tbls brown sugar
2 Tbls brown vinegar
1/3 cup chutney
1 onion, chopped
1 green capsicum, chopped (seeds removed)
1 Tbls mild curry powder
500g canned button mushrooms, drained
1 tsp Maldon salt
1/2 tsp ground pepper
METHOD
Preheat oven to 180 degrees celcius.
Brown chicken with olive oil on grilling pan. Place in baking dish.
In a pot combine all other ingredients and bring to boil for 8-10 min.
Pour over chicken.
Bake for 1-1.5hrs until cooked through.
Serve with either basmati rice, cauliflower rice or green vegetables.
