Baked Spanish Chicken

INGREDIENTS

  • 1 x chicken cut into 8 portions ( you can use any cut of chicken ie. Chicken breast or thigh fillets)

  • 1 Tbls olive oil

  • 1 x 400g tinned crushed tomatoes

  • 1 x 400g tomato soup 

  • 1 Tbls brown sugar 

  • 2 Tbls brown vinegar

  • 1/3 cup chutney

  • 1 onion, chopped

  • 1 green capsicum, chopped (seeds removed) 

  • 1 Tbls mild curry powder

  • 500g canned button mushrooms, drained

  • 1 tsp Maldon salt 

  • 1/2 tsp ground pepper

METHOD

  1. Preheat oven to 180 degrees celcius. 

  2. Brown chicken with olive oil on grilling pan. Place in baking dish. 

  3. In a pot combine all other ingredients and bring to boil for 8-10 min. 

  4. Pour over chicken. 

  5. Bake for 1-1.5hrs until cooked through. 

  6. Serve with either basmati rice, cauliflower rice or green vegetables.
