Broccoli, cauliflower and leek soup

INGREDIENTS

1 tbsp olive oil

1 medium white onion diced

2 heads of broccoli florets chopped 

1 small head cauliflower chopped

1 leek chopped 

1 large carrot chopped 

Vegetable or chicken stock 

Salt and pepper to taste

INSTRUCTIONS

  1. In a large pot, sauté onion and leek in olive oil on medium heat until soft, about 5 minutes. 

  2. Add cauliflower, carrot and broccoli. Cook, stirring often.

  3. Pour in stock so vegetables are just covered. 

  4. Bring to boil and simmer for about 30-40 minutes. 

  5. Blend until thick.

  6. Add salt and pepper to taste.
