Granny Mimi's Chicken Soup

INGREDIENTS

  • 4 chicken wings or any chicken pieces

  • 2 Carrots roughly chopped

  • 2 medium stalks Celery roughly chopped

  • Large Handful Continental parsley roughly chopped

  • 1 onion peeled and halved

  • 1 leek roughly chopped (only white part)

  • 4-5 chicken stock cubes

  • 3 vegetable stock cubes

  • Water

INSTRUCTIONS

  1. Place chicken pieces in large pot.

  2. Throw in onion, carrots, celery, leek and continental parsley.

  3. Fill pot with water.

  4. Crumble chicken and vegetable stock cubes.

  5. Bring to boil.

  6. Cover with lid and simmer for 40-45 min until vegetables soft.

NOTES

  • I remove chicken wings as I prefer a broth, however you can also remove chicken pieces and shred the chicken through the soup.
