Ratatouille
INGREDIENTS
1 onion sliced
2 eggplants sliced
2 medium zucchinis sliced thinly
250g mushrooms cut into halves
400g tin whole peeled tomatoes
2 Tbsp olive oil
1 tsp dry oregano
1 tsp dry basil
1 tsp sugar
1 Tbsp tomato paste
INSTRUCTIONS
1) Sauté onion in oil until golden.
2) Add eggplant and mushrooms to onions.
3) Fry lightly for a few minutes until brown and soft.
4) Add zucchini to vegetables and continue to sauté.
5) Add tomatoes, herbs, sugar and paste.
6) Simmer partially covered on low heat for approximately 1 hr.
