Ratatouille Chicken

INGREDIENTS

6-8 medium chicken breast ( you can use other chicken pieces) 

1 medium zucchini diced 

1 medium eggplant diced

1 medium capsicum diced 

1 red onion diced 

1 cup grape tomatoes

1-2 garlic cloves minced 

1/3 cup tomato paste 

3-4 Tbsp olive oil

1 tsp dried oregano

1/2 tsp dried basil 

1 tsp salt

1/2 tsp black pepper 

Basil to garnish ( optional)

INSTRUCTIONS

1) Preheat oven to 180 degrees 

2) In a large bowl combine all the vegetables, garlic, oil, tomato paste, salt and pepper. Mix well.

3) Line a baking tray and place breasts on tray. Season with salt and pepper.

4) Spread the ratatouille mixture over the chicken breasts.

5) Bake uncovered for 1 hour, stirring the ratatouille occasionally. 

6) Garnish with basil.
