Zoodles or Pasta with Roasted Cherry Tomatoes
INGREDIENTS
1 kg cherry tomatoes halved
3-4 cloves garlic, crushed
80g Parmesan cheese, grated
4 Tblsp olive oil
Fresh Basil leaves chopped
Salt and ground black pepper to taste
500g penne pasta OR 4 large zucchinis spiralled
METHOD
Preheat oven to 200 degrees Celsius.
Place halved tomatoes in a baking dish.
In a bowl, mix the garlic, cheese, salt and pepper until combined.
Spoon over tomatoes.
Pour olive oil evenly over tomatoes and bake for ~ 35min until browned.
Whilst tomatoes cooking, boil pasta in salted water or stirfry zoodles in a fry pan.
Drain pasta/zoodles.
Add pasta or zoodles to tomato mixture in baking dish and combine.
Sprinkle basil over and serve whilst hot.
