Zoodles or Pasta with Roasted Cherry Tomatoes

INGREDIENTS

  • 1 kg cherry tomatoes halved

  • 3-4 cloves garlic, crushed 

  • 80g Parmesan cheese, grated

  • 4 Tblsp olive oil

  • Fresh Basil leaves chopped

  • Salt and ground black pepper to taste 

  • 500g penne pasta OR 4 large zucchinis spiralled

METHOD

  1. Preheat oven to 200 degrees Celsius. 

  2. Place halved tomatoes in a baking dish. 

  3. In a bowl, mix the garlic, cheese, salt and pepper until combined. 

  4. Spoon over tomatoes. 

  5. Pour olive oil evenly over tomatoes and bake for ~ 35min until browned. 

  6. Whilst tomatoes cooking, boil pasta in salted water or stirfry zoodles in a fry pan. 

  7. Drain pasta/zoodles.

  8. Add pasta or zoodles to tomato mixture in baking dish and combine. 

  9. Sprinkle basil over and serve whilst hot.
