Zucchini Soup

INGREDIENTS

  • 1 Tblsp olive oil

  • 2 onions or leeks chopped

  • 8-10 zucchinis chopped 

  • 3-4 vegetable stock cubes 

  • Water just covering zucchinis OR liquid vegetable stock to cover 

  • Salt and pepper, to taste

METHOD

  1. Sautee onions or leeks in olive oil. 

  2. Roughly chop zucchinis. 

  3. Cover with water and stock cubes Or liquid stock. 

  4. Bring to boil then simmer for 30-40min.

  5. Blend. 

  6. Add salt and pepper to taste. 

  • Note: Add ½ tsp cumin or curry powder when sautéeing the leeks to add a kick of flavour.
