Baked Salmon with Lemon and Dijon Mustard
INGREDIENTS
5 X 200g salmon fillets
3 Tbsp olive oil
2.5 Tbsp lemon juice ( freshly squeezed if possible)
3 Tbsp continental parsley, chopped
2 garlic cloves or 2 tsp minced garlic
1 Tbsp Dijon Mustard
1 tsp Maldon salt
METHOD
Preheat oven to 180 degrees celcius.
Line a baking tray with baking paper.
Place salmon fillets close together on tray.
Mix all ingredients in a bowl.
Coat salmon in marinade. I often marinade for a few hours if you can but not necessary.
Bake for 20 minutes or until cooked through.
