Baked Salmon with Lemon and Dijon Mustard

INGREDIENTS

  • 5 X 200g salmon fillets

  • 3 Tbsp olive oil

  • 2.5 Tbsp lemon juice ( freshly squeezed if possible) 

  • 3 Tbsp continental parsley, chopped

  • 2 garlic cloves or 2 tsp minced garlic 

  • 1 Tbsp Dijon Mustard

  • 1 tsp Maldon salt

METHOD

  1. Preheat oven to 180 degrees celcius.

  2. Line a baking tray with baking paper.

  3. Place salmon fillets close together on tray.

  4. Mix all ingredients in a bowl. 

  5. Coat salmon in marinade. I often marinade for a few hours if you can but not necessary. 

  6. Bake for 20 minutes or until cooked through.
