Baked Balsamic Chicken
INGREDIENTS
4 x 200g boneless skinless chicken breasts 2 tbsp olive oil 4 tbsp low-sodium soy sauce 5 tbsp balsamic vinegar 3 cloves garlic minced
2 tbsp brown sugar
1/2 tsp black pepper 1 tsp kosher salt or to taste
INSTRUCTIONS
Place chicken breast in a Ziploc bag. Add in olive oil, soy sauce, balsamic vinegar, garlic, sugar, black pepper, and salt. Seal the bag and gently press the marinade around the chicken to combine and evenly coat the chicken.
Refrigerate and let marinate for at least 15 minutes.
Preheat oven to 180 degrees C and grease a baking dish with some oil.
Butterfly and flatten the chicken breasts. Place the chicken breast into the prepared baking dish and bake for 40 minutes or until cooked through and browned.
Serve with a green salad, stir fried greens, baked vegetables or cauliflower fried rice.
