Roasted Purple Cabbage

INGREDIENTS

  • 1 head purple cabbage roughly chopped into wedges

  • Olive oil

  • Maldon salt 

Tahini dressing

  • 1/4 cup tahini paste

  • 2 Tbls maple syrup

  • 1/2 tsp garlic powder 

  • Pinch of salt 

  • Water to thin out sauce if needed

INSTRUCTIONS

  1. Preheat the oven to 180 degrees celcius and line a baking tray with parchment paper

  2. Slice the cabbage into wedges –Place the cabbage wedges on the baking sheet, then drizzle with oil, Maldon salt

  3. Bake for 25 to 30 minutes, or until some of the edges of the cabbage are browned and crispy.

  4. Remove from the oven and serve warm, and as desired.

  5. Lightly Drizzle tahini dressing over cabbage ( optional)
