Whole Roasted Cauliflower with Tahini

INGREDIENTS

  • 1 large cauliflower

  • Cumin

  • Olive oil

  • Maldon salt

  • Tahini

  • Slithered almonds

INSTRUCTIONS

  1. Pre heat oven to 180 degrees

  2. Bring about 10cm of water with 1 tsp salt to the boil.

  3. Place cauliflower in water, put lid on and reduce heat to a simmer.

  4. Allow cauliflower to cook for about 10 min ( use a knife or fork to see that it is softened but not fully cooked through)

  5. Remove from pot and place on lined baking tray.

  6. Pour 1 Tbls of oil over the warm cauliflower.

  7. Sprinkle ground cumin generously over cauliflower. Season with salt.

  8. Place in oven and roast for about 30-40 min until brown.

  9. Remove from oven and pour over 2-3 tbls of tahini ( I use Melissa’s organic).

  10. Place back in the over for another 5-10 min.

  11. Sprinkle a little more cumin and olive oil over the cauliflower.

  12. Place on serving dish and sprinkle with roasted slithered almonds.
