Chicken/Beef Fajitas

INGREDIENTS

  • 1 kg beef or chicken cut into strips

  • 1/4 cup lime juice

  • 1/2 cup olive oil

  • 1 Tbsp brown sugar

  • 1 large red capsicum thinly sliced and seeds removed

  • 1 large green capsicum thinly sliced and seeds removed

  • 1 clove garlic crushed

  • 1 tsp Mexican spice

  • Ground salt and pepper to taste

Tomato salsa

  • 3 firm tomatoes chopped

  • 1 medium onion chopped

  • 1 tsp sugar

  • 1 tsp salt

  • 1/3 cup lime or lemon juice

Guacamole

  • 2 large ripe avocados

  • 2 cloves garlic crushed

  • 2 tbsp lime or lemon juice

  • 1 tsp salt

  • 1 tsp cracked pepper

  • 1/4 tsp chilli flakes ( optional)

INSTRUCTIONS

  1. Combine sugar, lime juice and salt in bowl. Let sugar dissolve completely in the liquid.

  2. Add the tomatoes and onion combining well. Set aside in fridge until need.

  3. Combine the lime juice, oil, brown sugar, garlic, Mexican spice, salt and black pepper and pour over meat or chicken and marinate for at least 2 hrs.

  4. Start frying chicken/meat and capsicums on fry pan just before eating.

  5. Serve chicken/meat, tomato salad and , guacamole in warmed up mini tortillas, Simpson or mountain bread wraps or lettuce cups.
