Tasty Tomato Salad

INGREDIENTS

  • 300g cherry tomatoes halved

  • 4-5 firm roma tomatoes cut into wedges

  • 500g tomato heirloom mix halved

  • 1 small red onion chopped

  • 1/2 cup thinly sliced fresh basil

  • 2-3 tablespoons extra-virgin olive oil

  • 2 tablespoons balsamic glaze

  • 1/2 teaspoon Maldon salt

  • Freshly ground black pepper, to taste

INSTRUCTIONS

  1. Cut Roma tomatoes in wedges and other varieties in halves.

  2. Chop onion.

  3. To assemble the salad, spread the tomato wedges over a large serving platter.

  4. Layer about one-third of the onions on top. Add half of the cherry tomatoes, followed by a layer of the heirloom tomatoes, followed by another one-third of the onions. Finish with the remaining cherry tomatoes, followed by the remaining onions, and sprinkle the basil all over.

  5. Drizzle the olive oil over the salad, followed by the balsamic vinegar. Sprinkle the salt and black pepper on top.

  6. Mix just before serving.

  • Note: Fresh mozzarella or ricotta is the perfect addition to this salad.
