Pistachio Crusted Fish

INGREDIENTS

  • 4 X 200g fresh white fish ( I use blue eye cod or barramundi but can be done on salmon too)

  • 2/3 cup unsalted shelled pistachios

  • 2-3 sprigs fresh thyme

  • 1 clove garlic (optional)

  • Dijon mustard

  • Olive oil

  • Salt and pepper to taste

INSTRUCTIONS

  1. Preheat oven to 180 degrees Celsius.

  2. Line a baking tray with baking paper.

  3. Place the fish fillets on the tray.

  4. Blend the nuts, thyme and garlic in a food processor.

  5. Brush fish with olive oil.

  6. Sprinkle salt and pepper.

  7. Place 1-2 tsp of Dijon mustard on each fillet.

  8. Cover generously with pistachio mixture.

  9. Bake for 20 minutes or until cooked.
