Pistachio Crusted Fish
INGREDIENTS
4 X 200g fresh white fish ( I use blue eye cod or barramundi but can be done on salmon too)
2/3 cup unsalted shelled pistachios
2-3 sprigs fresh thyme
1 clove garlic (optional)
Dijon mustard
Olive oil
Salt and pepper to taste
INSTRUCTIONS
Preheat oven to 180 degrees Celsius.
Line a baking tray with baking paper.
Place the fish fillets on the tray.
Blend the nuts, thyme and garlic in a food processor.
Brush fish with olive oil.
Sprinkle salt and pepper.
Place 1-2 tsp of Dijon mustard on each fillet.
Cover generously with pistachio mixture.
Bake for 20 minutes or until cooked.
