Mixed Vegetable Soup
INGREDIENTS
3 carrots roughly chopped
2 heads broccoli cut into florets
1 leek roughly chopped
2 sticks celery roughly chopped
3 zucchinis roughly chopped
¼ butternut cubed
vegetable or chicken stock to cover
( 1 cube per 250 ml water)
1 Tbls olive oil
Salt and pepper to taste.
INSTRUCTIONS
Heat 1 Tbls olive in pot.
Roughly chop vegetables.
Mix and Sauté veggies for a few minutes.
Cover with stock so vegetables are just floating.
Bring to the boil, then simmer for ~40 min.
Add salt and pepper to taste.
