Mixed Vegetable Soup

INGREDIENTS

  • 3 carrots roughly chopped

  • 2 heads broccoli cut into florets

  • 1 leek roughly chopped

  • 2 sticks celery roughly chopped

  • 3 zucchinis roughly chopped

  • ¼ butternut cubed

  • vegetable or chicken stock to cover

    ( 1 cube per 250 ml water)

  • 1 Tbls olive oil

  • Salt and pepper to taste.

INSTRUCTIONS

  1. Heat 1 Tbls olive in pot.

  2. Roughly chop vegetables.

  3. Mix and Sauté veggies for a few minutes.

  4. Cover with stock so vegetables are just floating.

  5. Bring to the boil, then simmer for ~40 min.

  6. Add salt and pepper to taste.
